Chocolate Cupcakes With A Twist (Look To The Goat)



Once again, Billy comes through with a delightful chocolate cupcake recipe. I think it may become my standard. Just look at this batter. It has the appearance and texture of chocolate mousse. You can actually watch Billy (when he was still Billy for now he is a girl and a cute one at that, but I suppose that is for a different blog) prepare the cupcakes on this rather annoying Today Show video.

Instead of using the chocolate frosting featured in the video, I went with Billy's Vanilla Buttercream, which was just what we needed for Halloween decorating purposes. I used raw goat milk instead of regular milk. I am sure that made all the difference!

Billy's Buttercream Frosting


Ingredients

Makes enough for 30 cupcakes

1 cup (2 sticks) unsalted butter, room temperature
6 to 8 cups confectioners' sugar
1/2 cup milk (raw goat milk if you have it!)
1 teaspoon pure vanilla extract

Directions

In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 6 cups sugar, milk, and vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency.

Izzy and I couldn't get enough of these cupcakes but who could tell what the rest of the guests thought. Most were so high on sugar they were too busy bouncing about to even comment!

oh I am so jealous! Raw goat's milk, delivered to your door?! Swoon... and then made into frosting for chocolate cupcakes? I might just faint with jealousy!
